Lemon Mousse with Raspberry Sauce

Ingredients

1 1/2 C Boiling water

1 8 serving size Jell-o Lemon sugar free gelatin

2 t Lemon zest

1 C Cold water


Ice cubes

8 ozs Heavy cream, whipped and sweetened with splenda to taste, and a little lemon zest

1 10 oz Package frozen raspberries (unsweetened), thawed, and pureed in blender

Directions

Stir boiling water into gelatin and lemon zest in large bowl at least 2 minutes, until completely dissolved.



Mix cold water and ice to measure 1 3/4 cups. Stir into mixture until slightly thickened.



Stir in whipped cream with a wire whisk.



Pour half of the raspberry sauce into dessert dishes. Top with mousse, Spoon more of the raspberry sauce over the top.



Garnish as desired.



Refrigerate 4 hours until firm.
