Pecan Pancakes

Ingredients

2 C Almond flour

2 t Baking powder

1/2 t Salt

2 T Splenda, granular

2 Large eggs


2 C Heavy cream

2 T Melted butter

1 t Vanilla extract

1/2 C Finely chopped pecans

Directions

In a bowl combine almond flour, baking powder, salt, and splenda.



In another bowl, beat the eggs.



Add the heavy cream, melted butter, and vanilla extract and mix by hand until blended.



Add the cream/egg mixture to the dry ingredients and stir just until well combined.



Fold in the nuts.



Allow mixture to stand for 15 minutes.



Heat griddle to 350F degrees. Oil lightly with vegetable oil.



Drop approximately 1/4 C of batter on griddle for each pancake.



When the surface is set and covered with bubble, turn and brown the other side.



Serve immediately with warmed sugar free maple syrup.
