Cheesecake Nut Cups

Ingredients

For Nut Crust:
2 C. almonds
1/2 C. melted butter
3 tsp. beaten egg
2 packets of Splenda
dash of cinnamon (optional)
For cheesecake filling:
2 pkgs. cream cheese (softened)
1/2 tsp. vanilla
2 eggs
8 packets of Splenda

Directions

Preheat oven to 350 degrees. Spray muffin tin with Pam or use paper cups.



Chop nuts fine in blender. Put in bowl and add remaining ingredients. Combine until mixed. Push into prepared muffin pan and bake 5 minutes.



While baking crusts, cream together softened cream cheese and Splenda. Mix in vanilla until creamy. Add eggs and mix until creamy once more. Spoon into baked muffin crusts.



Bake at 350 degrees for 10 minutes or until slightly golden on top.



Chill four hours or overnight.

These freeze beautifully. Great for quick snacks, decadent desserts, or dinner parties.
