Mexican Shrimp Cocktail

Ingredients

2 lbs unpeeled,large fresh shrimp
6 cups water
2-3 Tbsp. lime juice
3 cloves minced garlic
1/4 tsp salt
1/2 tsp pepper
1 cup ketchup
1/2 cup lime juice
1/4 cup minced onion
1/2 to 1 tsp. hot sauce
1/2 cup chopped tomoto
1/2 cup chopped cilantro
avocado chopped
lime wedges

Directions

Peel shrimp and de-vein. Bring 6 cups water and next 4 ingredients to a boil in a large saucepan; add shrimp. cook 2 - 3 mins. until shrimp turns pink. drain the shrimp, reserving 1/2 cup liquid.



stir together reserved liquid, ketchup, 1/2 cup lime juice, onion, & hot sauce. stir in the shrimp, tomoto & cilantro. Chill in the fridge

you can use pre-cooked shrimp. stir it in as the recipe states, but take it out after 30-60 secs.
