Greek Chicken Salad

Ingredients

Mix together in a plastic zip lock baggie for marinade:

2 Cloves garlic, minced

2 t Lemon juice

2 t Olive oil

1/2 t Oregano

1/2 t Kosher salt

1/4 t Fresh cracked black pepper

2 lbs Boneless, skinless chicken breasts

FOR THE SALAD MIX:

3 C Peeled cubed cucumbers

1/2 C Onion Slivers

1/2 C Feta cheese crumbles

10 Kalamata olives, chopped

2 Tomatoes, seeded and chopped

DRESSING:

1/2 C Sour cream

1/4 C Grated cucumber

1 t White wine vinegar

1/2 t Garlic powder

1/4 t Salt

1/4 t Red pepper

1/8 t Black pepper
CHICKEN:

Mix all marinade ingredients together in a large ziplock bag, add chicken breast and marinate in the refrigerator 4 hours. Remove and broil approximatley 6 - 7 minutes per side until done (can also be grilled). Chop into 3/4 inch cubes. Set aside in a bowl.

Mix cucumbers, onions, feta, olives, and tomatoes together, add cooled chicken and toss.

Combine all ingredients for the dressing and pour over the chicken and veggies in the bowl. Fold mixture until well combined.
