Bourbon Chicken

Ingredients

2 lbs Boneless skinless chicken thigh meat, cut into bite size chunks

8 ozs Soy sauce

Brown sugar twin to equal 1 Cup of regular brown sugar

1 T Garlic powder


2 t Ground ginger

4 T Dried minced onion

1 C Bourbon whiskey

4 T Dry white wine

Directions

Mix all marinade ingredients and pour over the chicken in a bowl. Cover and refrigerate (stirring often) for several hours (best overnight).



Bake chicken at 350F degrees for one hour in a single layer, basting every 10 minutes. Remove chicken. Scrape pan juices with all the brown bits into a frying pan.



Heat, and add 3 T dry white wine.



Stir and add chicken. Cook for 1 minutes and serve.

This is delicious served over a bed of riced cauliflower.



Cook cauliflower until just tender. Put through a ricer and mix with melted butter.
