Ingredients

8 ozs Whole blanched almonds

2 Whites from two large eggs

1 C Granular Splenda

1/2 t Almond extract
Grind the almonds in the food processor to medium-fine texture.

Whip the egg whites until stiff but not dry.

Fold in the almonds, splenda, and almond extract.

Drop the batter by teaspoonfuls onto a parchment paper-line baking sheet.

Let sit for one hour.

Bake at 375F degrees until the tops are lightly golden brown, about 12 to 15 minutes.

Immediately remove the cookies to a wire rack and cool completely.
