Lime Curry Chicken

Ingredients

2 lbs Boneless skinless chicken breasts

2 t Extra virgin olive oil

2 Shallots, thinly sliced

1/4 C Green peppers, diced

1 T Curry powder


Juice of 2 limes

1/4 C Plain yogurt

Parsley sprigs

1 T slivered almonds

Directions

Cut chicken diagonally into thin slices.



In a large skillet, heat oil and saute shallots until softened.



Add green pepper and cook until tender.



Stir in curry powder.



Add chicken and stir fry until chicken is no longer pink.



Add lime juice.



Just before serving, stir yogurt into skillet.



Garnish with parsley and almonds.
