Sun-dried tomatoe deviled eggs

Ingredients

1 Dozen large eggs

1/2 C Mayo

1/4 C Sour cream

4 T Sun-dried tomatoes in oil, drained on paper towels and then minced


1 T Dijon mustard

1/2 Purple onion, minced

1 t Tabasco

1/2 t Salt

Directions

Place eggs in a saucepan in a single layer with water to cover. Bring to a boil, cover. Remove from heat and let stand 18 minutes. Let cool.



Peel eggs, then cut in half lengthwise. Transfer yolks to a large mixing bowl.



Mash yolks finely with a fork, adding mayo and sour cream until fluffy. Fold in remaining ingredients.



Spoon or pipe filling into the egg halves evenly, mounding slightly.



Store refrigerated in an airtight container.
