Summer Bean Medley

Ingredients

1/2 lb Fresh, small green beans, trimmed

1/2 lb fresh small wax beans

8 Fresh mushrooms, sliced

1 C Chopped purple onion

1/2 C Chopped Red bell pepper


4 T Extra virgin olive oil

4 T Red wine vinegar

3 Cloves garlic, minced

1/2 t Salt

1/4 t Freshly cracked pepper

Directions

Cook the beans in a large pot of boiling water until just tender, but still crisp. About 5 minutes.



Plunge the beans into a bowl of ice water to stop the cooking and retain bright colors. Drain and place into a large bowl.



Add the mushrooms, onions, and peppers to the beans. Toss to mix.



For the dressing:



Whisk the oil into the vinegar in a small bowl.



Add the remaining ingredients and pour over the vegetables, toss lightly.



Serve immediately.
