Strawberry Ice Box Pie

Ingredients

CRUST:

1/3 C Butter

1/3 C Brown sugar twin, granular

1 C Almond flour

1/2 C Walnuts, finely chopped

FILLING:

8 ozs Cream cheese, softened to room temperature

1/4 C Splenda granular

Dash nutmeg

1/2 t Vanilla

1 C Sliced fresh strawberries

1 C Heavy whipping cream

1/4 C Splenda granular


TOPPING:

Additional sweetened whipped cream and more strawberry slices

Directions

CRUST:



Melt butter.



Combine all ingredients for crust in a bowl and mix well.



Pour melted butter into crust ingredients and mix until crumbly.



Press crust mixture into a 8 or 9" pie pan, bottom and up sides.



Chill overnight.



FILLING:



Combine softened cream cheese, granular splenda, vanilla, and nutmeg and mix until well blended.



Stir 3/4 C of the strawberries into cream cheese mixture.



Whip cream with splenda until stiff peaks form. Fold into the cream cheese mixture.



Fold remaining strawberries into cream cheese mixture (reserve a few for garnish).



Spoon mixture into pie crust.



Freeze overnight.



Remove pie from freezer and let partially thaw in refrigerator. Serve partially frozen garnished with additional sweetened whipped cream and strawberry slices.

Additional Information

This is very refreshing pie for the summertime.
