Almond Joy cookie bars

Ingredients

COOKIE DOUGH:

1/3 C Butter

1/3 C Unsweetened cocoa

3/4 C Splenda granular

1 C Almond flour

1/2 C Almonds, finely chopped

FILLING:

1/4 c Splenda granular

8 ozs Cream cheese

1 Egg

2 T Heavy cream

1 T Coconut extract

1/2 t Vanilla


TOPPING:

1/2 C Unsweetened coconut, shredded

2/3 C Almonds, chopped

6 ozs Low carb milk chocolate bar, grated

Directions

Cream butter with the splenda and cocoa in a small mixing bowl.



Add almond flour and almonds, blend together. Mixture will be crumbly. Reserve 1 C for topping.



Press remainder of mixture into the bottom of an 8" X 8" baking pan.



Bake at 350 degrees for 12 - 15 minutes or until lightly browned.



Blend splenda with cream cheese until smooth.



Add the egg, cream, coconut extract, and vanilla. Beat well.



Spred mixture over baked crust and sprinkle with reserved topping. Bake for 15 minutes.



While still warm, sprinkle cookies with the coconut, almond, milk chocolate mixture and let melt.



Cool before serving.



Cut cookies into 2" squares.
