Tomato Basil Soup

Ingredients

4 C Fresh tomatos, peeled & seeded

2 C Tomato juice

2 C Chicken stock


14 Fresh basil leaves

1 C Sour Cream

1 Stick butter

Salt and pepper to taste

Directions

Combine tomatos, juice and stock in saucepan. Simmer 30 minutes.



Puree, along with basil, in small batches in blender or food processor.



Return to saucepan, add sour cream and butter.



Stir over low heat until heated through.



Garnish with fresh basil.
