Ham & White cheddar cheese soup

Ingredients

1 T Olive oil

1/2 C Onions, chopped

1/2 C Celery, chopped

1/4 C Green pepper, chopped

1 t garlic, minced

1 C Cooked ham, diced

4 C Chicken broth


1 Bay leaf

Salt & pepper to taste

1 t Fresh basil, chopped

1/4 C Heavy cream

2 C White cheddar cheese, grated

Chopped green onions for garnish

Directions

Saute the onion, celery, green pepper, and garlic in olive oil until tender.



Add the ham and cook to brown.



Add the broth, bay leaf, salt, pepper, and basil.



Simmer uncovered for about 20 minutes.



Add cream and bring back to a boil.



Slowly add the cheese, stirring constantly.
