Blackberry mousse

Ingredients

2 C Fresh blackberries

1 Envelope Knox geletin

2 T Cold water

1/3 C plus 2 T Granular splenda


1/4 C Water

2 Egg whites

1 1/2 C Heavy cream

Blackberries for garnish

Directions

Puree blackberries in food processor or blender.



Strain through a fine strainer to remove seeds.



Soften geletin in 2 T cold water. Set aside.



In a medium saucepan, place blackberries, splenda, adn 1/4 C water. Simmer for 5 minutes. Mix into geletin mixture.



Beat egg whites until stiff but not dry. Fold into berry mixture.



Beat cream until stiff peaks form. Fold into berries.



Pour mousse into 4 individual serving glasses.



Garnish with fresh blackberries and additional whipped cream.



Chill in refrigerator 3 or more hours, or until ready to serve.
