Peppery Lime Shrimp

Ingredients

40 Jumbo shrimp, raw, peeled and deveined
1/4 C Green onions, chopped
1/4 C Lime juice
1 T Soy sauce
2 T Lime zest
1/4 t Freshly cracked black pepper

1/4 t Crushed red pepper
4 Cloves garlic, minced
2 t Sesame oil
PAM cooking spray

Directions

Mix all ingredients except cooking spray and oil in a large glass or plastic bowl. Cover and refrigerate 4 hours.



Heat oven to 400F.



Spray a 13 X 9 X 2" pan with non-stick cooking spray.



Arrange marinated shrimp in a single layer in pan.



Bake 12 - 15 minutes.



Drizzle with sesame oil and serve hot.

I use these shrimp to top large salads with a creamy/sweet lime dressing.



They can also be served as appetizers with a cream lime sauce.



As a main course they are wonderful too.
