Chocolate Cloud Cookies

Ingredients

PAM cooking spray
Almond flour
3 Egg whites
1/8 t Cream of tartar

1 C Splenda
1/2 t Vanilla
3 T Unsweetened cocoa powder
1/2 C Low carb chocolate, broken into small bits
1/3 C Walnuts, chopped

Directions

Preheat oven to 250F.



Line two cookie sheets with foil. Coat foil with PAM spray, then lightly dust with almond flour.



In a large bowl, beat egg whites with an electric mixer until foamy.



Add cream of tartar and beat until soft peaks form. Add vanilla.



Mix in splenda, one tablespoon at a time. Sift cocoa powder over mixture.



With rubber spatula, fold in the chocolate bits and nuts.



Drop by teaspoonfuls onto foil.



Bake for 25 - 30 minutes or until crisp.



Let cool on sheets for a couple minutes. Then transfer to wire racks to cool completely.
