Santa Fe Calzone

Ingredients

4 Low carb tortillas
10 ozs Ricotta cheese
8 ozs Provolone cheese
8 ozs Chorizo, cooked
3 Large eggs
Salt to taste
Chile powder
1 Large egg, beaten

Directions

Mix ricotta cheese with the 3 large eggs, season with salt and chili powder to taste adn set aside. Brush with melted butter.



Place 2 slices of provolone cheese side by side, overlapping on one tortilla, then top with 3 ozs of the ricotta mix in the middle.



Top with 1/2 oz of the chorizo.



Wet the tortilla around the edges with the beaten egg, fold in half. Repeat with the remaining tortillas.



Preheat oven to 350F. Brush tortillas with the beaten egg and bake for approximately 10 minutes, until crispy and golden.
