Shrimp in Tomatoes

Ingredients

2 lbs Large shrimp, shelled, deveined, rinsed

9 T Extra virgin olive oil

6 Cloves garlic, minced

3/4 t Dried oregano, crushed

3/4 t Dried Basil, crushed


3 C Cherry tomatoes, halved

6 t Lemon juice

1 C Parmesan cheese, freshly grated

3 T Snipped italian parsley

Directions

Pat shrimp dry with paper towels.



In a large skillet heat olive oil over medium high heat.



Add shrimp, garlic, oregano, and basil. Cook about 6 minutes until shrimp turn opaque and pink, stirring frequently.



Add tomatoes and lemon juice, cook and stir another 1 1/2 minutes. or until heated through.



Sprinkle with cheese and parsley.
