Cancun Shrimp

Ingredients

4 T Butter
28 oz Can Green enchilda sauce
6 Garlic cloves, minced
1 Green bell pepper
8 ozs Mushrooms, sliced

2 lbs Large shrimp, cooked
1 Jalapeno chile, membrane and seeds removed, diced
1/4 C Cilantro, chopped
1 T Chicken boullion

Directions

In a large skillet heat 2 T butter.



Add the garlic and jalapeno, saute for about 1 minute.



Pour in green enchilada sauce, chicken boullion and simmer for 5 minutes.



In a separate skillet add 2 T butter, add mushrooms, bell peppers, and tomatoe.



Saute for 3 - 4 minutes.



Combine mixture to sauce mixture and mix well.



Add shrimp and cilantro.



Cover and let simmer for 3 minutes.

Additional Information

You can substitute chives for the cilantro if you like.
You can also add 1 cup diced tomatoes.
