Chile Relleno Squares

Ingredients

8 Eggs
1/4 C Atkins bake mix
1/2 t Baking powder
1 C Cottage cheese

1/4 C Shredded cheddar cheese
1/4 C Shredded Pepper jack cheese
4 ozs Chopped green chile
1/2 t Chipotle Tabasco Sauce

Directions

In a bowl beat eggs lightly.



Add baking mix and baking powder.



Combine remaining ingredients in a separate bowl.



Mix in egg mixture.



Pour into an 8-inch square pan coated with cooking spray.



Bake at 400 degrees for 15 minutes.



Reduce heat to 350 degrees and bake for 35 minutes more.



Cut into 4 squares and serve warm or cold.
