Sonoran Huevos Rancheros

Ingredients

Cooking spray
12 Eggs
3 lbs Chorizo
12 Green onions, sliced
3 Cans (4 ozs each) Chopped green chiles, drained

3 Avocados, diced
3 C Chihuahua cheese, shredded
1 C Salsa of choice
1 C Sour cream

Directions

Spray a muffin tin (large size cups) with the cooking spray.



Cook chorizo until done. Breaking up any large clumps. Drain grease and set aside.



Place about a 1/4 lb of cooked chorizo in bottom of each muffin cup.



Add about 1/4 can of the green chiles on top of the sausage.



Now add a layer of one sliced green onion.



Now add about a 1/4 cup of the chihuahua cheese.



Break an egg into each cup of the muffin tin over the layered ingredients.



Bake in a 400 degree oven for about 15 minutes or until eggs are done to desired stage.



Place two muffins on serving plate and top with diced avocado, a dollop of salsa and finsih with a dollop of sour cream.
