Red Snapper Veracruzana

Ingredients

2 lbs Red Snapper fillets
1 T Olive oil
1 C Red salsa of choice
1 1/2 T Capers
4 Jalapeno peppers, seeded, membrane removed, sliced
3 T Cilantro
2 Bay leaves

1 Onion
1 T Dried oregano
2 Garlic cloves, minced
2 T Fresh lime juice
16 Pimento-stuffed green olives
Salt and pepper

Directions

Lay fish fillets in a dish and sprinkle with lime juice, salt, and pepper.



Preheat oven to 350 degrees.



Heat oil in a large skillet.



Add the onion and cook over medium heat until golden.



Add the minced garlic and cook 2 minutes longer.



Add the salsa, olives, capers, jalapenos, bay leaves, and cilantro.



Cover skillet and simmer 5 to 6 minutes.



Arrange the fish in a baking dish.



Pour the hot sauce over the fillets and bake, uncovered, 15 minutes, until fish flakes easily.
