Asparagus & Cheese Soup

Ingredients

1 Large onion chopped
4 t Olive oil
2 C Asparagus spears, cut into 1 inch pieces
2 C Heavy cream
1 14 1/2 oz Can Chicken broth

1/4 t Salt
1/8 t Cayenne pepper
2 C Shredded cheddar cheese
1 Small tomatoe, seeded adn chopped
2/3 C Sour cream

Directions

In a large saucepan cook onion in hot oil until tender.



Add the asparagus, cream, chicken broth, salt, and cayenne pepper.



Cook and stir until thickened and bubbly, reduce heat.



Simmer covered for 10 to 12 minutes or until vegetables are just tender, stirring occasionally.



Add cheddar cheese, tomato, and sour cream, stir until cheese melts and soup is heated through.
