Yucatan Soup with Lime

Ingredients

1 lbs Boneless, skinless chicken breasts, cut into bite size pieces
4 Cloves garlic, minced
1 T Olive oil
1 T Chili powder
1/4 t Ground cumin

1/2 t Crushed red pepper
2 14 1/2 oz cans chicken broth
1/2 C Green onions, chopped
1 Large tomato, chopped
3 T Fresh lime juice

Directions

In a dutch oven cook the chicken and garlic in hot oil over medium high heat until the chicken is no longer pink.



Stir in the chili powder, cumin, and red pepper.



Stir in the chicken broth and green onions.



Bring to boiling, reduce heat. Simmer, uncovered for 10 minutes. Remove from heat.



Stir in the lime juice and tomato.
