Sherried Smoked Salmon Soup

Ingredients

3 C Sliced fresh shitake mushrooms
3/4 C Thinly sliced leeks
1 T Butter
2 C Vegetable broth

2 C Heavy cream
8 ozs Thinly sliced smoked salmon, flaked
2 T Dry sherry
1 T Snipped fresh dill

Directions

In a large saucepan cook mushrooms and leeks in hot butter until tender.



Stir in broth. Bring to boiling.



Sitr cream into mushroom mixture. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more.



Stir in salmon, sherry, and dill. Heat through.
