Pan Fried Trout

Ingredients

2 Eggs, beaten with 2 T water
3/4 C Atkins corn muffin mix
2 t Dried parsley
1 t Dried minced onions
1 t Garlic powder
1 t Dried basil
1/2 t Salt

1/4 t Dried lemon peel
1/4 t Black pepper
1/4 t Cayenne pepper
1 lb Trout fillets
1 T Butter

Directions

Mix all dry ingredients in a large plastic bag.



Season fish with salt/pepper.



Dip each trout fillet into egg wash separately, then place one at a time into bag of atkins corn muffin mix and shake.



Heat the butter in a heavy frying pan. When hot add the fish fillets in a single layer. Cook the coated fish for six minutes, flip fillets over and continue cooking until golden brown on both sides.
