Southern Ham Chowder

Ingredients

1 1/2 C Thinly sliced yellow summer squash or zucchini
1/4 C Chopped red pepper
1/4 C Chopped green pepper
1/2 t Dried thyme, crushed
1 T Butter
2 C Water

1/4 t Black pepper
1 1/2 C Fresh cauliflower florets, roughly chopped
1 lbs Thinly sliced cooked ham, chopped
3/4 C Finely chopped green onions
1/2 C Heavy cream

Directions

In a large saucepan cook the squash, cauliflower florets, sweet peppers, and thyme in hot butter over medium heat until squash and cauliflower are tender. Add water and pepper.



Bring to boiling, reduce heat. Simmer, covered for 15 minutes. Remove from heat.



Mash slightly with a potatoe masher. Stir in ham, green onions, and cream.



Heat through.
