Cocoa-Macadamia Nut Sandies

Ingredients

1 C Butter, softened
1/2 C Splenda granular
1/4 C Unsweetened cocoa
1 T Water

2 t Vanilla
2 C Almond flour
1 C Macadamia nuts, finely chopped
COATING:

3/4 C Splenda granular
1/4 C Unsweetened cocoa

Directions

Heat oven to 325F degrees.



Combine butter and 1/2 cup of splenda granular in large mixing bowl.



Beat at medium speed, scraping bowl often, until well mixed.



Add cocoa, water, and vanilla, continue beating until well mixed.



Add almond flour, beat until well mixed.



Stir in macadamia nuts by hand.



Shape dough into 1-inch balls. Place 1 inch apart onto ungreased cookie sheets.



Bake for 18 to 20 minutes or until set. Remove from cookie sheets. Cool completely.



Mix 3/4 C splenda granular and 1/4 C unsweetened cocoa together in a bowl.



Roll cookies in the coating and place each cookie into a small paper candy cup.
