Butter-pecan Shortbread

Ingredients

BAR:

1/2 C Butter
1/3 C Brown sugar twin granular
1/2 t Vanilla
1 1/4 C Almond flour
1/4 C Chopped pecans


TOPPING:

3 t Splenda granular
1 T chopped pecans

Directions

Heat oven to 350F degrees. Line 8 inch square baking pan with aluminum foil, extending foil over edges.



Combine butter, brown sugar twin, and vanilla in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low, add almond flour and 1/4 cup pecans. Beat until well mixed. Mixture should be crumbly.



Pat mixture evenly into prepared pan. Sprinkle with Splenda and 1 tablespoon pecans. Bake for 24 minutes or until edges are lightly browned.



Cool 10 minutes. Lift shortbread out of pan, using foil. Cut into bars and cool completely.
