Speedy Lasagna Bake

Ingredients

2 lbs Ground chuck
1 C Small curd cottage cheese
1/2 C Parmesan cheese
3 C Shredded mozzarella cheese
1 T Italian seasoning
1 12 oz can Tomato paste

1 1/3 C Atkins bake mix
2 C Heavy cream
1 t Salt
1/2 t Black pepper
4 Eggs

Directions

Heat oven to 400F degrees. Grease bottom and sides of rectangular baking dish, 13 X 9 X 2 inches with butter.



Cook beef in skillet over medium heat, stirring occasionally until browned, drain.



Layer cottage cheese and parmesan cheese in baking dish. Mix beef, 2 cups of the mozzarella cheese, the italian seasoning and tomato paste. Spoon evenly over cheeses. Stir remaining ingredients until blended. Pour over beef mixture.



Bake uncovered 40 to 45 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1 cup of mozzarella cheese. Bake 1 to 2 minutes or until cheese melts.



Let stand 5 minutes before cutting.

Additional Information

You could add spinach to the cottage cheese.



Try using ricotta cheese to replace the cottage cheese.
