Okra and Shrimp

Ingredients

2 c. sliced okra
3 tablespoons vegetable oil
3 tablespoons butter
1 pearl onion, finely chopped
1/2 c green bell pepper, seeded and coarsely chopped
1 can no sugar added tomato paste

1/4 cup white wine
1 tablespoons lemon juice
1 tablespoon fresh parsley, chopped
salt
black pepper
1 pound shrimp, peeled and deveined

Directions

Rinse the okra and pat dry. Cut into 1/4" slices. Heat the oil and butter in a large skillet until the butter is melted. Add the onion and green bell pepper and toss to coat evenly. Stir in the okra and cook over medium heat until the onion is limp.

Add the tomato paste, wine, lemon juice, parsley, salt, and pepper. Simmer, stirring occasionally for about 3 minutes. Add the shrimp and continue cooking for 3 more minutes, or until the shrimp turns opaque.
