Crab Fondue

Ingredients

FONDUE:

1 lb Crabmeat
1 8oz package Cream cheese
1 6 oz package Gruyere cheese, grated
1/2 C Heavy cream
1/4 t Lemon pepper
1/4 C Sherry
Salt and pepper to taste


DIPPERS:

Assortment of grilled meats/poultry/fish/shellfish
Veggies, cut into bite sized chunks
Low carb bread (cut in cubes)

Directions

Remove all cartilage/shell from crabmeat.



In heavy saucepan combine cheeses, cream, seasonings and sherry. Cook over medium while stirring until blended and smooth.



Add crabmeat and heat, stirring occasionally, until hot and bubbly. Transfer to slow cooker or fondue pot set on low to maintain temperature.



For serving, spear meat etc with fork and swirl into fondue in a figure-8 motion.



If fondue thickens too much stir in a little additional cream or sherry.

Additional Information

Carb count depends on what you dip into the fondue, so carb count is for fondue itself and not the dippers.
