Crabmeat Mornay

Ingredients

1 stick Unsalted butter
1 Small bunch green onions, minced
1/2 C Fresh parsley, finely chopped
1 Pint heavy cream
8 ozs Swiss cheese, grated
1 T Dry sherry

1 lbs Crabmeat
1/2 t Cayenne pepper
Salt to taste
1 t Xantham gum
1/2 C water

Directions

Melt the butter in a saute pan.



Saute the onions and parsley until the onions are translucent.



Blend the xantham gum into the 1/2 C water well. Set aside.



Add cream to pan. Add cheese and stir until melted and smooth.



Add the xantham gum/water mixture a little at a time whisking well after each addition until desired thickness has been reached.



Add the remaining ingredients, stir and then fold in the crabmeat.



Serve immediately.
