Oysters En Brochette

Ingredients

8 Slices thick bacon(reserve drippings)
1/2 C Unsalted butter
1 T Worcestershire sauce
1/4 t Liquid smoke
1 T Lemon juice
1/2 t Garlic powder
1/4 t Cayenne pepper
1/2 t Salt

1/2 t Fresh ground black pepper
24 Shucked oysters, well drained, liquor reserved
16 Medium Mushrooms
16 Medium Cherry tomatoes
1 Green bell pepper, cut into 1 inch pieces
1 lb Fresh spinach. washed, dried, stems removed
Minced fresh parsley

Directions

Cook bacon over medium heat until half done.



Melt butter in a heavy saucepan, add worcestershire sauce, liquid smoke, lemon juice, garlic powder, salt, cayenne pepper, black pepper, and reserved oyster liquor.



Cook over medium heat 5 minutes. Cool slightly.



Preheat broiler.



Place oysters in butter mixture, turning gently to coat well. Using 6 oysters per skewer, thread vegetables and oysters on 4 skewers, alternating vegetables and oysters, with a bacon piece between each item.



Lay skewers across top of a baking pan with ends of skewers resting on sides of pan.



Drizzle remaining butter mixture over top of vegetables and oysters.



Broil 4 inches from preheated broiler 3 minutes per side, turning once.



Add a little bacon grease to large heavy skillet. Heat on medium until warmed.



Add spinach and saute until just wilted.

Additional Information

This can be made as a main dish, just double the recipe.

Comments

To serve, place a mound of spinch that has been sauted in bacon drippings in center of rammekin.



Slide oysters and vegetables from skewers onto the spinach.



Drizzle each serving with buttery drippings from the baking pan.



Sprinkle each serving with minced parsley.
