Chocolate Hazelnut Charlotte Russe

Ingredients

1 Package Atkins chocolate chocolate chip muffins, prepared according to package directions and baked in lady finger pan (should make 16)


4 oz. Unsweetened chocolate (4 squares)
1/2 C Hazelnut sugar free Davinci syrup
1 cup whipping cream
1/4 c Davinci chocolate sf syrup
2 tbsp cold very strong brewed coffee
Hazelnuts and low carb dark chocolate bar, chopped for garnish

Directions

Prepare muffin mix according to package directions.



Place batter into lady finger molds and bake at 350F until toothpick inserted in center comes out clean. Allow to cool on wire rack.



In top of a double boiler over hot water, melt chocolate, add 1/2 cup of the davinci hazelnut syrup to your taste.



In a medium sized mixing bowl, whip cream until thick.

Remove and reserve 1/2 cup.



Fold melted chocolate, 1/4 cup chocolate davinci and coffee into remaining cream. Spoon into individual small dessert glasses lined with 2 of the chocolate lady fingers that have been cut in half. Chill. Garnish with dollop of the reserved whipped cream. Top with chopped hazelnuts and additional chopped or shaved low carb dark chocolate.
