White Chocolate Chunk Macadamia Nut Cookies

Ingredients

1 1/3 C Almond flour
1/2 t Baking soda
1/2 t Salt
1/2 t Xantham gum
1/2 C Butter
1/3 C + 2 T + 1 t Splenda granular

1/3 C + 2 T + 1 t Brown Sugar twin granular
1 Egg
1 1/2 t Vanilla
8 ozs Low carb White chocolate bars broken into small chunks
1/2 C Chopped macadamia nuts

Directions

Mix first 4 ingredients in a bowl and set aside.



With electric mixer, cream the butter with the splenda and brown sugar twin until smooth. Add egg and vanilla.



Add dry mixture and mix.



Stir in white chocolate chunks and macadamia nuts.



Use a round measuring tablespoon to make dough into round balls and lay 2 inches apart on cookie sheet.



Bake 10 - 12 minutes or until centers are set and very lightly browned around the edges. Cool 5 minutes before removing from baking sheet to cooling rack.

Additional Information

Cookies are about 2 grams carbs each.
