Marys Blueberry Muffins

Ingredients

2 C Almond flour, sifted 3 times
2 T Splenda granular
1 t Baking powder
3/4 C Butter, melted and cooled
3/4 C Heavy cream

3 Eggs
1 t Lemon extract
1 t Vanilla extract
3/4 C Frozen fresh blueberries (freeze your fresh berries and use)
1 t Xantham gum

Directions

Line 12 muffin cups with muffin liners. Preheat oven to 350F degrees.



In a bowl mix together the wet ingredients. In a larger bowl mix the dry ingredients (except berries).



Mix wet ingredients into the dry ingredients only until combined, do not beat.



Fold in the berries.



Divide mixture evenly between the muffin cups.



Bake for 25 minutes and golden brown in color. Muffins should be firm to the touch..



Cool on cooling rack for 20 minutes.
