Xanders Scallops Tarragon

Ingredients

6 Mushrooms, sliced
4 Green onions, sliced
1/2 Butter
2 T Parsley

1/2 t Tarragon
24 Large Scallops
2 C Dry white wine
Parmesan cheese

Directions

Saute mushrooms, parsley and green onions in butter for 2 minutes.



Add the tarragon, scallops, and wine.



Cook until tender. Remove scallops and reduce sauce until thickened a little.



Place scallops in serving dish, pour sauce over scallops and sprinkle with parmesan cheese.
