Ingredients

3/4 C Extra strong coffe or esperesso - cooled
2 T Unsweetened cocoa
1 T Vanilla
SF Davinci syrup to sweeten (flavor is your choice)

1/4 C Heavy cream
1/2 t Xantham gum
Extra heavy cream whipped for garnish

Directions

Place coffee, cocoa, vanilla, davinci syrup in a blender and blend for about 30 seconds.



Start blending again, adding ice a little at a time starting with 1 handful.



Stop the blender as needed to check. Add more ice if not thick enough and blend until fairly smooth.



Add about 1/4 t xantham gum while the blender is moving. Give it a minute and then check. If not thick enough turn blender back on and add another 1/8 to 1/4 t and blend for another minute. If it gets too thick add a little water to thin.



Once you have a good consistency add the cream and blend for only a few seconds.
