Chicken Piccata

Ingredients

8 Boneless, skinless chickn breasts
3 T Capers with juice
1 jar of marniated artichoke hearts

Juice of 1 lemon
Salt and pepper to taste
1 t Xantham gum

Directions

Heat oven to 350 degrees f.



Pound the chicken until flat.



Place chicken in a pan, add capers with their juice, artichoke hearts with juice and the lemon juice. Crack some fresh black pepper on top and bake about 45 minutes until golden brown on top.



Remove from oven, remove chicken from pan.



Stir in xantham gum and stir until thickened.



Place chicken back in pan and place back into oven until sauce is thick.
