Grilled Rock Lobster Tails

Ingredients

8 (6oz each) Rock lobster tails
8 t Lemon juice
4 T Olive oil
4 Cloves garlic, minced

2 t Chili powder
1 C Mayonnaise
2 t Snipped fresh dillweed
1/2 t Finely shredded lemon peel


Directions

With kitchen shears cut each tail in half through the center of hard topshell, meat of lobster tail, and through the undershell. Set lobster aside.



In a bowl, combine 4 teaspoons of the lemon juice, olive oil, garlic, and chili powder.



Brush mixture on exposed lobster meat.



Grill lobster, meaty side down on the rack of an uncovered grill directly over medium coals for 6 minutes, brush again with lemon mixture, turn and grill 6 to 8 minutes more until meat is opaque in the center.



DIPPING SAUCE:



In a bowl combine mayonnaise, dillweed, lemon peel and remaining lemon juice.
