Cajun Plantation Eggs

Ingredients

8 Eggs
8 Strips bacon
1 C Cheddar cheese, grated
2/3 C Heavy cream

4 Green onions, chopped
Salt to taste
1/4 t Cayenne pepper

Directions

Heat oven to 350 degrees.



Spray 4 individual large muffin tins with cooking spray.



Cook bacon in microwave until mostly cooked.



In small bowl, blend 4 eggs, cream, salt & pepper, set aside.



Wrap 2 strips of bacon around the bottom of each tin.



Top with 1/8 C of the cheese and 1/8 of the onions.



Crack 1 egg into each tin, keeping the yolk intact.



Pour blended ingredients in each tin.



Top with remaining onions and cheese.



Bake for 15 - 20 minutes or until raised and golden on top.

Sprinkle plate with small pieces of green onion. Place 2 egg cups in center of plate. Serve with hollandaise sauce and additional bacon strips.
