White Chocolate Mousse

Ingredients

1 3/4 C Whipping cream, divided
1/4 C SF Davinci white chocolate syrup
1 Envelope unflavored gelatin

3 oz Low carb white chocolate, broken into small pieces
2 Egg whites, room temperature
4 T Splenda

Directions

In large microwavable safe bowl, place 3/4 C whipping cream and 1/4 C Davinci syrup. slowly stir in gelatin.



Allow to soften at least 5 minutes. Stir in white chocolate pieces.



Microwave on high 1 to 1 1/2 minutes or until chocolate is melted and mixture is smooth when stirred.



Chill 15 minutes or just until mixture is lukewarm.



In small bowl, beat egg whites until foamy. Gradually beat in 2 T splenda. Continue beating until stiff peaks form. Fold into white chocolate mixture.



In a small bowl beat remaining cup whipping cream until it starts to thicken. Add 2 T Splenda and continue beating until stiff. Fold into egg white/white chocolate mixture.



Spoon into individual serving dishes, cover and chill until firm.
