Ingredients

1 C Onion, chopped
1 C Green pepper, chopped
4 Garlic cloves, crushed
1 C Celery, chopped
1 C Mushrooms, chopped
1 C Zucchini, chopped
1 C Fresh spinach leaves

1 T Mrs. Dash original
1 Dash Cayenne pepper
1 t Oregano
1 t Basil
1 C Tomatoes, chopped, include juice
4 C Vegetable broth
1/4 C Parsely for garnish
Fresh grated Parmesan cheese
1/2 C Low carb small shaped pasta (optional)

Directions

Spray large heavy pot with cooking spray and wipe with paper towel.



Saute onions, green peppers, and garlic until wilted.



Add celery, mushrooms, zucchini, and seasonings.



Mix well and cover and let steam for 10 minutes.



Add pasta (optional), tomatoes, broth. Bring to boil and simmer until vegetables are just tender.
