Cream of Mushroom Soup

Ingredients

4 T Butter
1/4 C Finely chopped onion
1 lb Mushrooms, sliced

2 C Chicken stock
1/2 C Heavy cream
Salt and fresh ground pepper to taste
1 t Xantham gum

Directions

Melt butter in soup pot and add onion and mushrooms. Cook on low for 15 minutes, stir occasionally.



Slowly add stock and heat to boiling.



Simmer for 20 minutes.



Stir in heavy cream, salt & pepper to taste.



Stir in Xantham gum a little at a time until the desired thickness is achieved.



Reheat until warm.
