Cream of Chicken & Wild Mushroom Soup

Ingredients

1 t Xantham gum
2 T Butter
2 Shallots, minced
8 ozs mushrooms (shittake, portabella, & porcini chopped)
2 C Heavy cream
6 C Chicken broth

1 lb Chicken, cooked & diced
2 T Parsely, chopped
1/2 t Thyme
1/8 t Sage
1/8 t Rosemary, ground

Directions

Heat the butter in a heavy soup pot. Add the shallots and mushrooms, cook until soft.



Add the xantham gum and cook three minutes.



Add the cream and broth. Slowly bring to just a boil, stirring frequently.



Reduce the heat.



Add the rest of the ingredients. Simmer for 35 minutes.



Serve warm.
