Zucchini Cakes

Ingredients

2 C Zucchini, shredded
1 Egg
1 Egg yolk
1/4 C Atkins bake mix
1/2 t Baking powder
1/2 t Baking soda

1/4 C Onion, finely minced
1/3 C Parmesan cheese
1/4 t White Pepper
1/2 t Salt
1/2 t Thyme
Oil for frying

Directions

Combine all ingredients except oil in a bowl.



Heat oil in a skillet over medium heat.



Drop batter by about 1/4 cupfuls into oil and flatten with spatula.



Fry until golden brown.



Flip and cook other side.
