Broccoli Salad

Ingredients

2 Cups Chopped Broccoli
6 Slices Bacon Fried Crisp
1/4 C Grated Cheese

Dressing- This Will Make Extra

3/4 C. Mayo
Water
4 packets Splenda
1/2 tea. Celery Seed
1/2 tea. Onion powder
1/4 tea. Cracked pepper

Directions

Make the dressing...



Combine all ingedents except water. Carefully add enough water to make the dressing thin. You'll want it thicker then milk, but thinner then heavy cream so that it coats all over the broccoli. Set aside.





For the salad, chop the broccoli into pieces about 1/2". Use the tops and some of the stem. Crumble the bacon into the broccoli and add the cheese.



Pour on desired amount of dressing. Stir to cover everything. You won't need the entire 3/4 cup. But you want everything to be covered well. Carbs are based on using 1/4 Cup prepared.

Additional Information

I made this without knowing how much dressing I'd use. It's the same dressing I use for my favorite yummy slaw so try it on cabbage too. Or you can use the extra for for dressing on beef/chicken salads. Or over your favorite lettuce. The sweet creamy texture is really nice on just about anything!

I added in thin sliced pit beef and made a meal from just this salad. It's really good with just a bit of horseradish added with the beef too. You could also add in real onions, maybe some nuts or even try this with other veggies.
