Almond Crusted Chicken

Ingredients

1 1/2 C Almond flour
Sea salt to taste
Course ground black pepper to taste
3 C Sliced almonds, broken into pieces
4 Eggs

4 t Water
4 Large, boneless, skinless chicken breasts
4 T Butter
4 T Canola oil

Directions

Preheat oven to 400 degrees F.



Place almond flour in a bowl and season with salt and pepper.



Place almonds in a separate bowl, and set aside.



Place eggs in a bowl with the water, beat lightly.



Dip chicken in egg wiping away excess with your fingers.



Now dip chicken into the almond flour mixture.



Dip chicken into egg mixture again.



Now coat chicken thoroughly with almonds.



Heat buter and oil in an oven-proof skillet over medium heat.



Saute chicken until nicely browned, about 3 minutes, and turn over.



Cook one minute more, then transfer pan to the oven and bake until chicken is cooked through and juices run clear.
